A 10 year old dry Amontillado that has spent 4 years as a Fino ageing biologically in American Oak barrels under a layer of yeast called ‘flor’, and then 6 years ageing oxidatively as an Amontillado once the ‘flor’ has faded. Dark amber in colour, with aromas of citrus, almonds and vanilla from the wood ageing. It has a rich texture with a long finish. 16% ABV. IWSC Gold – Best fortified wine 2010.
